Sweets and Squash Ginger Collagen Soup

Now back to the soup! This was a "throw in the pot what I had meal prepped and not eaten yet” kind of soup and it turned out pretty darn amazing! Now go make you a pot of soup! .

Ingredients 

On medium high heat:

Sautee these 3:

Diced Ginger

Diced Garlic

Avo Oil

Add these 3 and toss together 

Diced Sweet Potatoes

Roasted Acorn Squash

@traderjoes Kabocha Squash, thawed

Then add these:

1 cup organic Chicken or Veggie Broth

1 can Coconut Milk

1 tbs Ground Ginger

1 tbs Tumeric

1 tsp Cumin

1 tsp Coriander

1 tsp Cinnamon

2 scoops @furtherfood Collagen Peptides

Stir together then cover the pot on low for 15 minutes. .

When all the ingredients are cooked and pot is at a low bubble, use an immersion blender to make a smooth, silky soup!
