I am about to share with you my all-time FAVE dish that I make on Whole30 that is SO easy and I enjoy eating off it to for DAYS! It is so full of flavor and has JUST the right kick to it!
What make this SO simple is @yaisthai Curry Sauces that I buy through @thrivemarket but you can also get them at your local @wholefoods as well! They are @whole30 compliant, paleo friendly and absolutely full of flavor! I can’t wait to try some of their other flavors!
The veggies in this recipe are totally swappable so feel free to throw in whatever sounds good to you! If you want to do ground beef or turkey instead of chicken go for it! If you want to throw in sweet potatoes and zucchini or kale instead, go crazy! This is a very flexible recipe and one you can get really creative with!
Without further ado, here are the deets!
1 bottle @yaisthai Yellow Curry Chicken
3 cups Cooked Cauliflower Rice
4 Chicken Thighs
Diced Red Peppers
1 Yellow Squash
Place Avocado/Coconut Oil in your Dutch Oven or whatever pot you have on hand.
Brown the chicken on both sides, then add the sauce. Let it come to a slow boil then lower the heat.
Add the veggies and cover for 20 minutes.
Add the Cauliflower Rice and cover for another 20 minutes or until all is cooked and incorporated!
